How do I change the “New Order # 100000001” email?

and others like it? I went to System configuration Sales Emails but I cannot find how to change the wordings. It is set to Magento’s demo store right now.

1. Go to “System” > “Transactional Emails”, click “Add New Template”

2. Choose “Template” = “New Order”, click “Load Template”

3. Update subject and content.

4. Go to “System” > “Configuration” > “Sales Emails” > “Order”

5. Change “New Order Confirmation Template” to your custom Template.
