If I wanted to install magento in a directory “magento”, customize the theme, setup my products, test thoroughly then move everything to work for the root domain - what would I need to do besides just moving the files?

This is similar to what you’re trying to achieve. http://www.magentocommerce.com/boards/viewthread/4279/, excluding the export and import of the database if yours is already in the same host. I haven’t had time to test it out though but basically it will work like that.

I had to do the same operation.

I did it first in a virtual machine, as a sandbox, and it worked fine.
I will then do it on my pre-production server.
