Is it possible to perform incremental import data from oscommerce without creating a new store every time you perform the import?

Unfortunately it is not possible right now. Recommended way of importing if you have a lot of data is to import categories and products in one session and customers and orders in second session. Please make sure to create a backup of your database prior to importing data.
