I am closing down a server, and I need to move 2 magento sites. Id like to not have to re-input all of my stores content. I have moved all files, and databases over.

At this point, I cant seem to find where I can modify the setting where magento connects to the DB. The DB name had to change during the move. (plesk vs cpanel).

Where can I find this info?

your DB info is present in app/etc/local.xml file

Now that I did that, I seem to have other errors. My index.php page is listing lots of data. Are there other things to be changed for a site to be moved?

In your admin, try to clear cache from System-> cache management and try

hmm. I cant even get in.

are you sure you have moved the filesystem and DB as it was?? because magento is trying to reinstall!! make sure the file permissions were set correct when you moved ...
