The Catalog Import/Export feature is in the works and will be available in one of the next releases.

Shall we expect Magento team to give some details on the database tables, structure and relations for products/categories/attributes ?
so custom import loaders could be written for those data.

Couldn’t you just look at the database structure using PHPMyAdmin or EzSQL.

In EzSQL (http://www.woyano.com/jv/ezsql)

The following code will print out a list of all your tables with detailed info:

$db->select("my_database");

foreach ( 
$db->get_col("SHOW TABLES",0) as $table_name )
{
            $db
->debug();
            
$db->get_results("DESC $table_name");
}
$db
->debug();

True...we can look at the tables....but if there were some database/table documentation, that would make things easier.  Is there any available documentation?

@dahliaz: as of yet i dont see any documentation available on this, keep note all the documentation is at the top menu under wiki and knowledgebase, and much is in the wiki, so if one (like yourself) has the ability, time and desire for something I am sure Roy and the Magento team would greatly appreciate someone writing a wiki article on this. I would try but it is not something needed to me at this moment and im still trying to wrap my head around this extensive code
