First, I’ll admit that I have very little .xml knowledge, I understand html and not much more.

I made a couple of changes to catalog.xml and got some bad results, luckily I had made a back-up.  Yet when I re-loaded the back up things did not go back to normal!  I’ve even tried deleting catalog.xml completely and the site does not change.

It could be that you’re seeing cached pages.

Check whether your cache is enabled or not in the admin.  If so, either clear it or disable it and check again.
