Magento

I got Magento all setup and figured out the XML framework pretty well and guys it is great.  Thank you.  My question is in regards to the Catalog.  The default catalog that came with magento seems to be hard coded to the most popular items.  Is there a framework for dynamically created Category Pages?  I assume there is and I am just missing something, but I can’t seem to find anything in the documentation.
