How do I change horizontal navigation menu for certain pages?

I have been researching this for the past two days and I am at my wit’s end.  Any help would be appreciated.

What I want to accomplish is to have two different horizontal menus that changes depending on the page you’re on.

Is there a way to change the horizontal navigation menu items by using the layout xml update feature in cms pages or static blocks?

For context, here is specifically what I need the site to do:
As a customer, when I visit the hompage, I see an INFO MENU (About, Direction, Contact, Shop, etc).  The INFO MENU shows on all cms pages except for Shop.  When I click on Shop, it leads to a shop home page with a CATEGORY MENU that remains as I browse products.  If I click on a cms page again (Contact Us, for example), I need the menu to switch back to the INFO MENU.

I’ve tried using multiple stores but I can’t figure out how to switch the store view based on the page type.

I’m open to any other suggestions on accomplishing this.  Thanks.
