How is an update from an older Version to a newer Version of Magento functioning?

Hello,

I´m running Magento Version 1.5.1.0 and would like to change it to Version 1.6.0.0. And I want to avoid destroying existing datas and settings.

Allegedly we should run it which the Connect-Manager by using the command:  /magento-core/mage_all_latest (Extension-Key).

Because I use a newer version of Connect Manager I know, that the extension key should name different. After a while of trying and experiment the Connect Manager found under the Extension Key

http://connect20.magentocommerce.com/core/Mage_All_Latest/

a Magento Version 1.4., but not Version 1.6.

Because of this I didn´t install it and still don´t know how to do it

Would somebody like to help me?

What you can do is make a fresh installation of Magento 1.6.0.0 and then move all your data there. It’s actually one of the safest ways you can implement upgrade without your data getting lost or the cart itself getting messed up.
