Server Specifications - more products, more data…slower page loads

It appears that things slow down as you add more products.  More products, more data...slower page loads - make sense. 

How big of a server do I need?  What type of specifications do i need to have with a magento store that has 20,000 + simple products and 700 configurable products?

Is there a rule of thumb to go by, based on the number of products?

Magento is very resource hungry and we ended up with major problems when it came to server configuration. We have 3500 products, 60000 customers, 6500 images, and over 500mb of data in the magento database. For this we opted to use a load balancer and two dedicated servers with file replication. It fell over within an hour on launch because our server company messed up the file replication. We now have one dedicated server behind a load balancer which serves the pages and another dedicated server for the database. This has been done for future infrastructure additions. Both servers are quad core and have 4gb of RAM and we get reasonable performance. We do have a social networking site integrated with Magento using symfony which puts extra load on our servers. Magento store homepage gets gets about 15 requests per second with this setup and speed is Ok now but we did have to modify a few things to improve it.
