Changing the field FROM in the header of mail()

Hi everybody…

I have this issue:
To prevent Spam, my host only allows me to send emails through mail() if the field FROM in the header be some email hosted in my server.
Magento uses the costumer’s email in this field, after the checkout, so my server rejects the sender and I don’t get any confirmation by email nor the costumer.

My question is:
Does someone knows how to change, to became standard, this field? e.g. If i figure out where is this function and change the field FROM to receive always “” instead of costumer’s email, probably will solve my problem.

Could someone help me?
I’ve tried SMTP solutions without success. :(
