Hello,
Is it possible to change some product’s attribute set? for example from ‘default’ to newly created. Or maybe “downgrade” any product with some custom attributes to “default attribute set”?

Not at this time. You will have to delete and recreate the products. You can, however, edit existing attribute sets.

If it’s not possible it would be nice to be able to choose another attribute set when duplicating.
It would help the product recreation.
