Change default charset utf-8 to ISO-8859-1… in the config of my dedicated server…

By default Magento is encoded in charset utf-8, but that’s a problem in France (and I suppose for many other countries) with Google.

Then I need to change it to ISO-8859-1. In order to do that, it seems that I need to change charset at many files, and I need to convert the CSV translation files.

I’ve read that it is possible to set it in the apache configuration of the server. Will it work for Magento ?

I tried with my dedicated server (under Fedora 7). I found the charset line in the following file : etc/httpd/conf/httpd.conf

# Specify a default charset for all content served; this enables
# interpretation of all content as UTF-8 by default.  To use the 
# default browser choice (ISO-8859-1), or to allow the META tags
# in HTML content to override this choice, comment out this
# directive:
#
AddDefaultCharset utf-8

I changed that to

AddDefaultCharset ISO-8859-1

but that did not make any change. Will I be able to do that even if Magento specifies the default charset as utf-8 in each HTML header ?

Why would it be a problem for Google if your site is in UTF-8?
